Even more interesting would be raising a kid to be a fluent "Interlingua" speaker, which is an artificial Latinate language designed to be comprehensible to speakers of *any* modern romance language, although it works better for the Spanish-Portuguese-Italian group.
Would lead to some very funny interactions as they realized that they could understand you, but didn't actually know what language you were speaking.

my high school Latin teacher was always talking about this facebook group she was in with other Latin teachers where they were all committed to raising their kids as native Latin speakers. apparently several of them have already pulled it off
