Always found the best approach is just approach the businesses even if you have zero experience in the industry - hey I'm doing some research, let me buy you lunch.
Then just be quiet and nod along as they spend an hour ranting about every problem and annoyance they have.

Agree, you don't need to built the next billion dollar company, but even going after local boring businesses, will take time to get into those industries and those business owenrs need to trust you. Why would they let you in their business as an "outsider".
Often these are labour intensive businesses, have enough clients. What they often lack are well trained employees to do the job.
Maybe the easist way is to find a business owner with the same mindset and partner with him.
Or have enough money to buy a business like that
