The US average for 100% ground beef was $6.92/lb in Aug ‘26, while Walmart sells a 6oz pack of portobello caps for $2.98. That’s ~ $7.95/lb. By weight, the mushrooms cost more than the beef and he's using them as a topping.
If you source the cheapest ingredients possible, which is arguably from Walmart, four of his "have you tried a veggie burger" burgers cost about $23.56 in groceries. Four beef burgers with the same toppings cost about $16.89. His budget swap is almost $7 more expensive.
I also guarantee that Bill Mitchell isn’t eating a frozen Morning Star patty packed with methylcellulose and sodium, he’s eating a fresh patty made with expensive vegetables, beans, and spices.
