Pasture-raised eggs are nutritionally different from conventional eggs, not just ethically different. A hen eating grass, insects, and foraging in sunlight produces a fundamentally different egg than one eating corn in a warehouse. What changes in the egg: - 4 times more Vitamin D - 2 times more omega-3 fatty acids - Higher Vitamin E and beta-carotene - A more favorable omega-6 to omega-3 ratio - Deeper orange yolk that signals higher antioxidant content Look for the Certified Humane or Animal Welfare Approved seal. The yolk color will confirm it immediately.
