Think twice before throwing away your watermelon rind this summer.
New USDA data shows the part most people toss is completely edible and contains fiber, potassium and vitamin C. And there are plenty of ways to actually make it taste good.
Experts say the rind can go into smoothies, slaw and stir-fries, or be pickled and roasted. Just wash the watermelon under cool running water before cutting it.
