My grandfather in Budapest makes goulash exactly once a year, on a date he won't explain, using a recipe he keeps locked in a tin box nobody else is allowed to open. "Just tell us the recipe," my mother said, every year, watching him guard paprika like state secrets. "We could make it for you the other three hundred and sixty-four days." "It's not for me," he said, stirring, refusing to elaborate further, same as every year before. I finally cornered him about it last winter, half joking, half genuinely tired of the mystery. "Papa, you hate goulash. You've said so, multiple times, to my face." He actually laughed at that, the tin box open on the counter for once. "I do hate it," he admitted. "Too much paprika, too soft, never liked it since I was a boy." "Then why……" "My wife loved it," he said, meaning my grandmother, gone eleven years now. "Every year on her birthday I make it exactly how her mother taught me, because she taught me, in this kitchen, the year we married. I eat maybe two bites. Rest goes in the freezer. I don't throw it away either." I found the freezer that night, humming quietly in the basement, eleven small containers lined up in a row, each one labeled only with a year. He's never explained why he keeps them instead of eating or discarding. I've stopped asking. Some recipes aren't really about the food at all.
